1 tsp Thyme, ground
1 tsp Coriander
1 tsp Chili powder
1 tsp Curry powder
1 tsp Paprika
1 tsp Cumin
1 lb Pork tenderloin
1 Tbs Parsley
1 Tbs Garlic, minced
1 Tbs Lemon juice
1/4 cup Olive oil
1-1/2 tsp Kosher salt

Mix together the first six herbs & spices.
Cut the pork tenderloin into roughly bite-size pieces.
Add the herb & spice mixture to the pork tenderloin.
Add the parsley, garlic, lemon juice and olive oil and stir the meat until everything is thoroughly mixed.
Marinate for an hour or longer at room temp. It will also keep for several days in the frig.
Just before cooking, add the salt and mix thoroughly or use a salt shaker once the pork is mounted on the skewers.
Put pork pieces on skewers and grill for 2-4 minutes on each side, being VERY CAREFUL to sear the outside but leave the inside cooked medium so final product is not dry.
Alternatively, pour ~1/2 cup olive oil in a skillet, get very hot, then add pork pieces, cooking no more than 2 minutes per side.
